The Bond nod is in the mood: black, brass, martini lines, quiet drama. The actual point is simpler: good food, seven thoughtful courses, and enough time between them to talk.

First course

Ceviche

Carrots · red onions · squash

A bright, crisp opening plate built around ceviche with carrots, red onions and squash. Fresh and sharp enough to wake up the palate without weighing down the start of the night.

Second course

Shrimp Mousseline

Pickled cucumbers

Soft, delicate shrimp mousseline paired with pickled cucumbers. The cucumber brings the acid and snap; the mousseline keeps the course silky and light.

Third course

Braised Short Rib

Squash · pumpkin · corn

The first properly rich course of the night: braised short rib with squash, pumpkin and corn. Deep, slow-cooked flavor with a sweeter, autumnal edge from the vegetables.

Lamb Tenderloin

Blackberry vinaigrette salad · lamb jus · potatoes

Lamb tenderloin served with potatoes, a concentrated lamb jus, and a salad dressed with blackberry vinaigrette. Rich, savory and a little tart right where it needs to be.

Fifth course

Chinese Spicy Noodles

Chicken stock · roasted tomatoes · fried leeks · bell peppers

A warm, spicy noodle course built on chicken stock, roasted tomatoes and bell peppers, finished with fried leeks. Savory, aromatic and deliberately a little messy in the best way.

Sixth course · dessert one

Peach Tart

Peach compote · peach crème · peach caramel

Peach three ways: compote, crème, and caramel together in a tart. Soft fruit, buttery pastry and enough caramel to make the transition into dessert feel worth it.

Seventh course · final dessert

Chocolate Mousse

Raspberries

Chocolate mousse with raspberries to close the evening. Rich chocolate, bright fruit, no unnecessary complication.

Somewhere around course four

Put the phone down. Ask for more jus. This is the part of the night where nobody should be checking the time.
